大豆卵磷脂（磷脂酰胆碱，简称PC）是大豆磷脂中最具生物活性的组分。本品是以大豆粉末磷脂为原料，采用独创的工艺和设备提取精制得到的产品，呈黄色或棕黄色塑状或颗粒状，纯度越高颜色偏白，易吸潮、氧化，易分散于水中并形成稳定的乳浊液；不溶于丙酮；几乎不溶于植物油和动物油；溶于乙醇、乙醚和己烷等有机溶剂。
